    The soul of soba and udon is the broth — which traditionally contains mirin and sake, making the broth the key to halal-friendly Japanese noodles. Halal Gourmet Japan's Japanese noodles page features restaurants across the country, including some registered as certified halal and a shop that describes developing a mirin-free broth.

    In Iwate, a soba restaurant describing a history back to 1907 has developed a Muslim-friendly version of wanko soba, the all-you-can-eat style where servers keep refilling your small bowl. The shop describes cooking its mirin-free broth in pots kept separate from the regular ones; fifteen bowls equal one regular serving of soba, and finishing more than one hundred earns you an original certificate. Halal-friendly wanko soba requires a phone reservation three days ahead.

    Convenient stops are registered as certified halal too: noodle restaurants at Narita International Airport Terminals 1 and 2 and at DiverCity Tokyo Plaza, all also registered as using dedicated kitchenware and tableware — an easy first or last bowl of your trip.

    Tourist towns have their own signature noodles. You can find a soba restaurant along Kawagoe's historic kurazukuri warehouse street, an udon shop in Ishikawa showcasing regional Komatsu udon with a registered prayer space, and a soba house in Takayama using local buckwheat flour that describes offering a halal-conscious menu with three days' advance booking — and allowing prayer inside outside the busy season. At a roadside station cafeteria in Fukushima's Urabandai, salt ramen made with locally crafted Yamashio salt and soy-based meat is served as a Muslim-friendly bowl.
