Flavors of the Great Steppe
Mongolian cuisine grew out of the nomadic culture of the vast steppe, blended with the food cultures of Asia, Russia and Eastern Europe — flavorful, varied, and with lamb at center stage.
In Tokyo, a restaurant described as having the relaxed feel of a dining room in Ulaanbaatar, Mongolia's capital — and as a gathering place even for Mongolian sumo wrestlers — serves lamb dishes with ingredients from Mongolia such as rock salt and sea buckthorn. It is registered as pork-free with vegetarian options.
Also in Tokyo, a restaurant led by a chef from Inner Mongolia serves Inner Mongolian dishes and is described as using only halal ingredients; it is registered as Muslim-owned, with halal meat and seasonings, pork-free dishes and vegetarian options.
