Taiwan's Vegetarian Table
Taiwanese food culture has a rich vegetarian tradition, with dishes made entirely without meat or fish.
In Kokuritsu, Tokyo, a restaurant described as one of the few in Japan serving traditional Taiwanese vegetarian cuisine uses no meat, no fish and none of the five pungent roots such as garlic, leek and green onion. Vegetables, soy protein, gluten, dried beancurd and homemade konjac are cooked to taste like genuine Chinese dishes of chicken or seafood, and some dishes are described as using whey protein. The restaurant is registered with vegetarian options.
